- 19(2)(b) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator:

The dipper well must run continuously with cold water throughout ice cream service. Clean the dipper well. Soiled ice cream scoops and black mould noted inside of the dipper well.
