      • Paper towel dispenser was empty at hand washing sink.- The staff restocked the dispensers.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Two small cutting boards in the meat cutting area were damaged and deeply grooved.- Replace the cutting boards to ensure they are smooth, cleanable, and maintained in good condition.

      • The handwashing sink tap (part of the three-compartment sink) was loose and not properly secured.-Repair the tap by tightening and securing it in place
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Two of the chest freezer handles were duct-taped. - Ensure the handles are repaired

      • There were several food items, including packaged meat products, in the display coolers that were not labeled. Invoices were provided and verified to indicate that the meat products came from an approved source. The inspector informed the operator and manager that all food items in the facility must be adequately labelled to indicate their source after being processed on site. - Operator ensures to label all food items properly.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Raw/unfinished wood shelves were noted under the meat grinder, in the walk-in cooler, and under meat-cutting table.-Please remove or seal/paint unfinished wood surfaces. Surfaces should be smooth, non-porous, non-absorbent, and easily cleanable.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Heavy accumulation of old food debris and grime was noted in hard-to-reach areas of the walk-in cooler.- Make sure to thoroughly clean this area of food debris and residue as discussed.- Ensure to set up deep-cleaning schedule for the facility.

      • There were cleaning cloths stored on food-contact surfaces. The inspector informed the operator and manager that cleaning cloths must be fully submerged in a sanitizer bucket solution at all times after use. The cleaning cloths were stored in a sanitizer bucket solution afterwards.
