      • Observation:Worn weatherstripping was observed at the back door.Corrective Action Required:Replace the weatherstripping at the back door to ensure a proper seal is maintained and to prevent potential pest entry.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Buildup of dust was observed on walk-in cooler fan. conduct cleaning to fan and affected areas.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Heavy dust buildup was observed on the kitchen ceiling. Conduct thorough cleaning of the kitchen ceiling.

    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Mechanical dishwasher was equipped with detergent, rinse and a chlorine concentration of 50ppm. The maximum hot water temperature was at 51C. Repair or replace the unit to ensure the chlorine sanitizer is at 100ppm. In the interim, manually sanitize.

      • 1. Rodent droppings were observed in the food storage area. Conduct pest control activities.2. Worn weather stripping was observed on the back entrance door, creating a gap that may serve as a pest entry point. Replace the weather stripping.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The male staff washroom door is not self-closing and cannot remain closed without the use of a brick placed behind it. Repair or replace the door and ensure it is capable of self-closing.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?

      • A can of cockroach insecticide was found in the dry storage room. Please remove from facility. Insecticides may be applied by pest control technician as there are safety requirements in place.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?

Please go through the plastic inserts and discard any that are cracked, broken or in poor repair.The walk in freezer condenser fan had ice buildup and on the floor. Please repair or replace the unit to ensure there is no ice buildup on the condenser fan or on the floor.Meat slicer had minor buildup of dried food/stain, please clean and sanitize.The ice scoop was sitting a milk crate. Please ensure the scoop is stored in a food safe bin.
