- 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
- The facility did not have an established procedure in place to monitor food temperatures of food products that were received from the central kitchen. A probe thermometer was available to measure food temperatures in the future. - Implement a food monitoring procedure and ensure the temperature of all foods (hot or cold) being delivered are measured and recorded. - Currently, lunches are packed by parents and placed in individual lunch bags with ice packs. Lunch bags are then placed into the refrigerator and the temperature of the refrigerator will be recorded on a temperature log. - If food is being delivered, the temperature of cold foods will be taken upon arrival to ensure it is 4 degrees celsius or below and placed in the refrigerator. Temperatures will be recorded on a temperature log.- If food is being delivered, the temperature of hot foods will be taken upon arrival using a probe thermometer and placed in a pre-warmed steaming unit to ensure the temperature is maintained at 60 degrees celsius or higher. The temperatures will be recorded on a temperature log.
