- Observation(s): Pizza hot holding units were maintained below 60C. Ensure all hot holding is being performed at a min 60C. All coolers were maintained below 4C.

- Observation(s): Ensure that all hot holding is monitored and documented throughput the day in operations log. Quats sanitizer dispenser is required to be monitored and documented on a daily basis. NOTE all cooler temps are monitored and documented throughout the day in operations log.

- Observation(s): Quats dispenser was dispensing zero sanitizer when tested for the sanitizer bottle refill option. Repair dispenser immediately. Note that the quats dispenser was dispensing 200ppm solution when using the hose option and not the bottle fill option.

- Observation(s): The self-serve hot hold pizza oven is slightly below 60 °C. Adjust to above 60 °C. Install an NSF (National Sanitation Foundation) accurate thermometer inside to monitor correct temperature rather than the digital setting. In addition to cooler temperature logs, begin a Hot-Hold temperature log.

- Observation(s): *Millwork wood cabinet & shelving installed above 3 compartment sink wasn't noted on approved plan. Once food service is approved in the kitchen, the wood shelving must be replaced with the stainless steel drain rack originally designed to be installed. Temporarily, ensure wood surfaces are sealed to prevent moisture build-up. *Ensure silicone seal added along splash back against the wall on the hand sink and 3 compartment sink.
