      • Observation (CORRECTED DURING INSPECTION): 1. Few containers at the air drying shelves found to be dirty.
      • 2. Low temperature dishwasher final rinsing sanitizer cycle chlorine concentration measured at 0 ppm.
      • Corrective Action:
      • 1. Clean and sanitize dirty containers with 2 compartment sink.
      • 2. Facility is take-out only. In the mean time, use the 2 compartment sink for ware washing. Use the 1st sink for washing and rinsing purposes, then use the 2nd sink to sanitize all dishes. 100 ppm chlorine measured at the 2nd sink. Change the chlorine solution every 2 hours, use the test strip to test the sanitizer concentration. Repair the dishwasher to ensure it can maintain the final rinsing chlorine concentration at plate to be measured at 50-100 ppm.
