- Nacho cheese hot holding measured 50C with probe thermometer. Operator indicated that cheese would burn and dry out at higher temperature. Increase temperature to 60C and will monitor. May need to discard after ever 2 hours. Other hot holding measured 58C with infrared thermometer and 60C when verified with probe thermometer.All coolers at 4C or less.
