      • Refrigerator door was left open and unattended in kitchen area. Operator was both stocking and doing food prep. Please keep the fridge door closed when not in use to ensure proper cold holding temperature can be maintained.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Flies noted in facility. One fly control device was present. Please purchase more of these devices to control the fly population.

      • Cloth buckets 0ppm QUATS upon inspection. Operator dumped solution and refilled with 200ppm QUATS. These are changed every 2 hours.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Dirty cardboard lining storage area. Please remove dirty cardboard as it is not cleanable.

      • Crispy chicken observed being held at room temperature. Inspector and staff reviewed process for cooking and storing crispy chicken. There needs to be temperature control after the first cook step, such as hot or cold holding. If the product is not temperature controlled, it may be stored for 2 hours at room temperature, then discarded. Operator moved to cold holding during inspection.
