      • Remove all waste material/containers of waste from the ground outside the back storage area. Clean and repaint the shelving in the back storage area. Thoroughly clean all surfaces noted above, and maintain in a clean condition.

      • In the lounge area, a build-up of debris, grease, mould growth, and spills is observed on the wall next to the garbage container, near the office; inside the walk-in cooler on the floor, wall edge, and upper shelves.

Temperature logs are available. The hand sinks are well equipped. Sanitizer is available: 200 ppm Quat in the spray bottles and wiping cloth buckets. The dish machine is sanitizing properly; the final rinse cycle is above 180°F at the manifold gauge. The glassware-washing machine is sanitizing properly with 12.5 ppm iodine. The kitchen facility is well organized.
