    • 23(1)(a) All equipment and utensils used to process, prepare, store, serve, sell or display food must be designed, constructed, installed and maintained to (a) protect food from contamination;
      • Scoops were stored directly inside dry food products. Scoops must be stored in a clean, protected manner to prevent contamination.
    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Cleaning was required due to a buildup of food debris on the dishwasher, food-grade bins, and inside food-grade containers used for utensil storage.

Chemical bottles were incorrectly labeled; bleach food-grade sanitizer was labeled as “Multi-Quat.” All chemical containers must be clearly and accurately labeled

    • 19(1)(e) A food establishment must be located, designed, constructed and maintained to ensure all of the following: (e) that there is effective protection to prevent the access and sheltering of insects, rodents and other pests.
      • In accordance with Section 2.17 of the NS Food Retail and Food Services Code, you must ensure exterior openings are protected against the entry of pests. Install a door sweep on the garbage door to prevent rodent entry.

      • Clean the debris build up under the exhaust hood above the dishwasher.

      • Equipment and utensils must protect food from contamination. Clean and sanitize the pan and the egg beaters to prevent contamination.

      • In accordance with Section 4.1 of the NS Food Retail and Food Services Code, you must ensure all equipment is maintained and functional for its intended use. Discard the taped spatula and brush.

      • Clean and sanitize all areas affected by rodents. Mice droppings were found along the walls of the bakery section in the kitchen.

    • 19(1)(b) A food establishment must be located, designed, constructed and maintained to ensure all of the following:  (b) that operations are carried out in an area of the food establishment that is sanitized and appropriate to the operation;
      • In accordance with Section 2.3 of the NS Food Retail and Food Services Code, you must keep all ceilings in food preparation, processing and storage areas in good repair. Ensure the ceiling above the dishwasher in the kitchen is resurfaced with approved material.
    • 23(1)(a) All equipment and utensils used to process, prepare, store, serve, sell or display food must be designed, constructed, installed and maintained to (a) protect food from contamination;
      • In accordance with Section 3.6 of the NS Food Retail and Food Services Code, you must store foods in food grade containers (plastic or glass) only. Ensure dry goods in the bakery section of the kitchen are stored in food grade containers.

      • In accordance with Section 4.1.8 of the NS Food Retail and Food Services Code, you must ensure a maintenance schedule is present for the exhaust hood ventilation system. Clean and sanitize the exhaust hood ventilation system above the grill.
    • 28(3) A person in a food establishment who comes into contact with food must be trained or instructed in food hygiene to a level appropriate to the activity that the person performs.
      • In accordance with Section 6.3.2 of the NS Food Retail and Food Services Code, you must ensure food handlers have the necessary knowledge and skill to enable them to handle food hygienically.
