    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Mold growth observed inside the ice machine in the meat preparation area. Clean and sanitize the machine.

      • dust buildup and debris were observed in the following areas; I. on the floor beneath the shelves in the aisles ii. at the floor/wall junctions, in the corners and behind the equipment in the bakery area. Non-food contact surfaces must be cleaned at a frequency that will prevent the accumulation of dust, dirt, food residue and other debris.
    • 29(2)(b) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (b) insects, rodents and other pests are controlled;
      • Clean and sanitize the areas affected by rodents.
    • 48(1) An operator must ensure that all food is stored and transported under conditions that do all of the following: a) protect the food from contamination, b) provide an environment that adequately controls contamination, c) protect the food from damage likely to make the food inedible.
      • Observed 5 dented cans on the shelves. All the dented cans must be removed and all staff must be aware that no dented cans should be on aisles for sale.
