      • The weather stripping of the exit door in the main kitchen is missing.Ensure the door has weatherstripping to prevent the entry of pests.

      • Mechanical dishwasher is not dispensing sanitizer and chlorine test strips shows 0 ppm at dishwash levels.Ensure mechanical dishwasher is repaired. Meanwhile, 2-compartment sink is used for sanitation of dishes and utensils.

      • There were no iodine sanitizer test strips available to monitor the glasswasher sanitizer concentration. Iodine test strips must be obtained.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Handwash sink tap near the dishwasher is leaking. Tap must be repaired or replaced.Bar counter above the glasswasher has a damaged edge covered in duct tape. Duct tape is not permitted because it interferes with cleaning and sanitizing. Counter edge must be repaired properly and all tape and tape residue removed.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Cutting board on the prep cooler has deep grooves that cannot be adequately cleaned and sanitized. The cutting board must be planed smooth or replaced.

      • Buildup of dirt and debris behind the dry storage room door.

      • No written pest control records available.Written pest control records must be started and available for review. July 15, 2024 - Owner indicated that they were in the process of hiring a PCO to do pest control for the facility.

      • Scoops left in the flour and sugar with the handles in contact with the flour and sugar. This is a cross contamination concern. Scoops must be stored so that the handles do not contaminate the food product. This was noted on the previous inspection.

      • Spray bottle containing sanitizer at the servers station was not labeled. Ensure all chemical containers are labeled.

      • Cleaning records had not been updated since June 21, 2023. Dirt and debris noted on the fire extinguisher next to the handwash station, in corners and under some equipment. July 10, 2024 1. No written sanitation procedures or records available for review. 2. Build-up of dirt and debris noted on floors, under and behind equipment.1. Written sanitation procedures must be developed. Written records of all cleaning tasks kept up to date and monitored by the manager to ensure that adequate cleaning is occurring. 2. Cleaning of the kitchen, equipment and storage areas must be improved.

      • There appears to be a leak from the pipe behind the ice machine. Leak must be repaired.
