- The concentration of the QAC sanitizer (QuatSan) in the spray bottle was measured at 50-100 ppm. Please ensure the concentration of QA sanitizers is maintained at minimum 200 ppm.

- Fly tape was hung above a food prep counter and service counter. To protect food from contamination, please ensure fly tape is not directly above any areas where open food may be prepared or served.

- The temperature of a refrigerator was measured at 6.5 degrees C. There was no food in the refrigerator at the time. The operator adjusted the temperature setting and the refrigerator temperature was then measured at 2.8 degrees C. Please continue to ensure refrigeration temperatures are maintained at a maximum of 4 degrees C.

- The wash temp gauge for the dishwasher displayed continuously at approximately 30 degrees C while the dishwasher was running. It was unclear whether the gauge was working properly. Please ensure that a minimum temperature of 66 degrees C is achieved during the machine's wash cycle and that the gauge is working properly so that adequate monitoring can be accomplished.
