    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • -Foods are subject to cross contamination from raw foods, unsanitary food contact surfaces or equipment. Raw chicken was being stored on a shelf above eggs in the refrigerator. Raw meat should be stored on the bottom of the fridge for defrosting. In addition the raw meat should be stored in a washable container to prevent cross contamination.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • -Chicken was observed defrosting at room temperature. This is not an appropriate way to defrost raw meat. Please ensure that raw meat is defrosted in the refrigerator overnight.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • -The number of sinks in the food establishment is inadequate for the type / level of food preparation. There was a 2-compartment sink and a residential dishwasher available for washing dishes. The following two options are available: *Install an additional sink for handwashing purposes *Discontinue preparing raw meat products

      • -Adequate records of pest control measures are not being maintained. Ensure pest records are being maintained.

    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • - A bowl of vegetables in the refrigeration unit are not covered. Staff were informed and the vegetables were covered to minimize the risk of contamination.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • **There is no freestanding thermometer present in the refrigeration units. please ensure a thermometer is placed in the refrigeration units to assist in monitoring refrigeration temperatures.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • - At the back edge of the kitchen sink counter requires recaulking. Please ensure the area is recaulked to prevent water infiltration that can lead to material deterioration.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • - Behind the chest freezer is an accumulation of debris. Please ensure the debris is removed to prevent the attraction of pests and to maintain clean and sanitary conditions.
