      • - Fried food was kept under a heat lamp, and the temperature was measured at 43.2°C. Staff reported the food had been cookedapproximately 30–60 minutes earlier.*All fried food was returned to the kitchen for deep frying to ensure it reached at least 74 degrees Celsius temperature.**Food must then be stored in hot holding equipment where the temperature is maintained at a minimum of 60°C at all times.
