    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • QUAT solution being used in the facility was measured at over 400ppm. A bucket of chlorine solution was mixed measuring 100ppm**Please ensure that QUAT solution if being used to sanitize food prep surface is maintained at 200ppm.**Follow manufacturer's instructions for mixing sanitizing solutions.**If using chlorine solution is being used, please maintain concentration at 100ppm at all times.

      • 1. In a cupboard containing customer utensils, bottles of medications were being stored. Operator removed the medication from the cupboard.2. At the back food prep area by the left side upon entrance into the kitchen, miscellaneous items (a pair of socks, lip balm, medication was stored on the countertop, staff removed the items and countertop was later used to store bin containing watermelons.**Please ensure that staff/miscellaneous items are stored separately away from food prep areas to prevent potential contamination of food.

      • There was no prepared sanitizer for sanitizing food contact surfaces while food prep was taking place. Operator mixed bleach solution during the inspection.**Ensure that a food safe sanitizer is present at all times when food is being prepped.**Use 100ppm of chlorine solution or 200ppm of QUAT solution.
