Dawn dish detergent was present in the sanitizer pail at the front service counter.REQUIRED ACTION: ensure that there is always 200 ppm Quat sanitizing solution available for use on food contact surfaces at all times. Use test strips to ensure 200 ppm.

- The designated hand sink in the back preparation room/storage room was being used for food preparation. One compartment was full of food debris, and the other compartment had several pails of soups/sauces sitting in an ice bath in the sink.REQUIRED ACTION: one of the compartments of the two-compartment sink is to be a designated hand wash station. It must be kept free of food debris and objects, and be accessible for hand washing at all times.

November 27, 2023: A significant reduction in the number of phorid flies was noted during today's inspection. Only two phorid flies were noted on the ceiling in the front beverage preparation bar area. Several phorid flies were noted on the walls beneath the dish pit area in the kitchen. Further cleaning/scrubbing and sanitizing of this area is required to remove all trace of dirt/food debris (this will act as a food source for flies if not removed). Noted on November 15, 2023: Numerous phorid flies were observed on the walls and ceiling, mainly in the area where the beverage preparation bar is located.

- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Various sauces measured at 38-42C in the small hot-holding on the cooking line. Staff were instructed to re-heat foods to 74C on the stove, and then maintain foods at 60C or higher once in the hot-holding unit (the hot-holding unit is not designed to re-heat foods, it will only maintain food temperatures once they are re-heated).

- Some flies were noted in the back storage area of the facility. Consult your pest control company to implement strategies to help control the fly problem.

- Section of carpeting was noted in the back storage/proposed food preparation area to be renovated. Floors in food preparation and storage areas must be smooth, impervious to moisture, easy to clean and in good repair. Carpeting to be removed and replaced with flooring finish that meets the aforementioned requirements.
