      • Used wet wiping cloths were stored on the food counter surface. Staff noted that the cloths are used once and not reused. The dirty cloths were laundered and replaced with clean clothsWiping cloths intended to be reused must be stored in a sanitizer bucket at the correct sanitizer concentration after each use to prevent the growth of microorganisms.

      • Food was being prepared and handled in the splash zone area next to the handwashing sink adjacent to the dishwasher area. Install a splash guard to prevent contaminated water from the handwashing sink from splashing onto food during food handling and preparation.

      • Recurring violation cited on June 8, 2026:1. 3 dead mice were caught in the mouse traps: 1 in the hot water tank room, 1 by the storage area, and 1 by the ladder next to the chemical shelf.2. House flies were observed on the wall at the bar area.Contact your pest control technician to eliminate the pests in the facility.3. The front door was not properly closing.Fix the door to prevent pests entry.4. House flies noted in the mop sink.Previous violation:February 2, 2026: 4 dead mice caught in the tin cans: 1 by back exit door, 1 in change area and 2 in the hot water closet.       • December 12, 2025: The preparation cooler has not been fixed. Perishable foods were stored in a very shallow ice bath, internal temperature was measured at 7.8 degrees Celsius. - Do not use an ice bath if temperature cannot be maintained at 4C or less. If an ice bath is used, facility must ensure that ice surrounds the container completely. December 2, 2025: Perishable foods stored in the preparation cooler at the sauté station were measured at 8 degrees Celsius. The kitchen manger advised that he aware of the issue. - All perishable foods under refrigeration must be stored in at a temperature of 4C or less. - Service the cooler and do not store foods in the cooler until it can maintain a temperature of 4C or less. - All foods were removed and relocated to the walk-in cooler. - If an ice bath is used temporarily, ensure the ice surrounds the containers of food. Again, all perishable foods under cold storage must be stored at a temperature of 4C or less.
