- Observation (CORRECTED DURING INSPECTION): Iodine sanitizer in glass washer in the bar area measured at less than 12ppm. Iodine solution in the jug where the feeding tube is connected to has run empty.
- Corrective Action(s): Staff replaced the empty jug with a new jug of iodine sanitizer. Iodine then registered in between 12.5-25ppm.

- Observation: Liquor cooler in the bar area measured at 7-9C. Staff is aware of the cooler being too high in temperature.
- Corrective Action(s): Staff moved juices used for making cocktails from the cooler to the walk-in cooler. Only non-perishable food and drinks can be stored in this cooler until it is fixed. Staff will contact a technician to fix the cooler. Date to be corrected by: 2 days.

- Corrective Action(s): Do not store in-use utensils in sanitizer. Utensils must be visibly clean before soaking in sanitizer and must be air dried before using. Store utensils dry, in ice water <= 4°C, or in hot water ≥ 60°C instead. Clean and sanitize the utensils and storage bucket at least every 4 hours.

- Observation (CORRECTED DURING INSPECTION): Sanitizer bucket for low temperature dishwasher recently changed. Sanitizer line not prime, 0ppm chlorine detected at the plate level at the time of inspection.
- Corrective Action(s): Staff primed the sanitizer line and 50ppm chlorine detected at the plate level during the final rinse cycle. Ensure when a new sanitizer container is used the sanitizer line is primed and the concentration of chlorine is checked using test strips prior to washing and dishes/utensils/equipment.

- Observation: Some mouse droppings observed in the area outside the liquor walk in cooler. Areas from the last inspection no droppings observed - good. Pest control technician's service report indicates activity is now in the attic and back area.
- Corrective Action(s): Continue working with the pest control company to deal with the mouse issue. Reminder to keep the back door closed during operation and when receiving deliveries to quickly close the door. Clean spills quickly and clean all hard to reach areas on a daily basis.

- Observation: Mouse droppings observed in the dry storage area, underneath shelves for takeout boxes/containers, and floor in the area just outside of the liqour cooler. Mice observed caught in the mechanical trap placed by the rear door. Mouse also observed caught in mechanical trap underneath the cooking line.
- Corrective Action(s):
- - Clean then sanitize the above noted areas with 200ppm quats immediately.
- - Pest control technician's report for January, February, and March 2019 indicates mice activity inside the premise. Follow the recommendation of the pest control technician and increase frequency of inspections/servicing. On top of the regular cleaning that is occuring all potential entry points into the premise must be looked at and adequately sealed.
