- Observation: High temperature dishwasher is not working. Operator states it is unable to run a cycle. Service has been requested prior to inspection.
- Corrective Action(s): Ensure dishwasher is able to reach 82°C/180°F during the rinse cycle after service. In the meantime, ensure all equipment is manually washed and sanitized using the three step method (wash, rinse, sanitize). Ensure equipment is fully submerged in sanitizer for at least 2 minutes. Air dry equipment before using. Correct as soon as possible.
