- 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
- Observation: Inadequate sanitizing rinse temperature; the rinse cycle temperature was less than 82 Celsius at the manifold. Public Health significance - High Temperature Automatic dishwashers must provide a sanitizing rinse at 82 C or more for at least 10 seconds to adequately kill off bacteria that can lead to foodborne illness.
- Corrective Action: Have the dishwasher repaired by a qualified technician, or provide evidence to Northern Health that the gauge temperature is meeting the manufacturer's specifications. Monitor and log the rinse temperature regularly so you know when the unit needs adjustment or repair. Sanitize dishware in 200-400 ppm QUATs solution after cleaning with the dishwasher until it has been repaired.
