      • Corrective Action(s): Staff immediately move the pork to the cooler. Please ensure all hot holding unit temperature is maintained at 60 degree or above.

      • Observation (CORRECTED DURING INSPECTION): Wiping cloths in the kitchen area do not contain sufficient chlorine concentrations to adequately sanitize food contact surfaces.
      • Corrective Action(s): Spray food contact surfaces with a sanitizer solution in a spray bottle before using the wiping cloths. This will ensure that the surfaces are adequately sanitized at all times.

      • Observation: 1) Front handsinks did not have paper towel immediately available for drying hands. (Note: cloths are not an acceptable means for drying hands). The kitchen handsink (by walk in cooler) did not hav eany liquid soap available - employees observed rinsing hands (with gloves on) with water only
      • * Note on glove use: Acceptable as long as they are regularly changed (ex. between activities like touching raw foods and then cooked foods). Employees must wash hands in between glove changes with soap and water. Educate staff.

      • Correction: Ensure that all handsinks have liquid soap and single-use paper towel available at all times.

      • Observation: 1) Ice scoops werer stored in ice bins. this is an issue as ice is a food and the handle of the scoop can come into contact with the ice and contaminate it.
      • Correction: Store ice scoops separately from ice (e.g. in another container) immediately
      • 2) Raw meats were sotred uncovered in the walk-in cooler. Meat juices may leak or other foods /debris may contaminate the meats.
      • Correction: Ensure that all foods in coolers/freezers are covered
