    • F1.2 Are proper temperature controls maintained to ensure safe storage and display of foods?
      • Observation(s): Facility uses time control for certain items. No time stamps were used at time of inspection.
    • F2.2 Are proper pest control measures in place on the premises?
      • Observation(s): 1) Back door was open at time of inspection, and there is no screen door available to deter pest entry. 2) There is an accumulation of debris under shelving units in the main kitchen area, and in the basement storage area, which may allow for harboring of pests. 3) Missing ceiling tiles in the basement allow for possible pest entry.
    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): The 3-compartment sink is used for both washing vegetables and dishwashing. It is unclear whether adequate sanitation is done in between each activity, and the sanitizer dispenser was empty at the time of inspection.
    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): 1) Cardboard and parchment paper is being used to line the shelving for food and food equipment storage; there is also cardboard placed under the shelving units by the dishwashing station meant for recycling that is touching the cleaned food containers. 2) Some ceiling tiles have very obvious decay or water damage and are to be replaced. As above (F2.2), missing ceiling tiles must also be replaced. 3) There is a water leak in the basement where the pop/soda lines are stored. The water leak appears contained away from the soda area, but must be repaired. Any area damaged by the water leak must also be repaired.
    • F2.7 Are there handwashing stations available and properly supplied?
      • Observation(s): Staff bathrooms were not supplied with paper towels for hand drying.
