      • The following violations were noted:1. Shelves and preparation surfaces were lined with pieces of cardboard. This was consistent throughout the whole kitchen. Please remove cardboard, as it is not a cleanable or sanitary surface for food preparation. If you wish to line shelving, please use a material that is easy to remove, clean and is nonabsorbent to moisture.2. A small section of the floor tile was damaged below the standing mixer. Please repair or replace these tiles, so the floor is smooth and easy to clean.

      • There were no drain plugs onsite for filling the sinks to properly dishwash
