    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • There were two cloths in food trailer that staff said they used for cleaning or drying. If using reusable cleaning cloths ensure they are stored in sanitizer solution between uses or use paper towels. Operator stated she would remove cloths.
    • 09. Are chemicals stored and handled in a safe manner?
      • Chemicals were stored by hand sink above hot holding unit used for gravy and on shelf directly next to pot used for gravy. Ensure proper storage of chemicals in area separate from food equipment storage.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Tap at hand sink in barnyard grill was loose. Please tighten tap.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • One of the chest freezers had a broken lid and could not close tightly. Ensure lid can close tightly.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Top of ice machine was dusty. Ice scoop was stored directly on top of ice machine. Clean and ensure surface is cleaned regularly.

    • 09. Are chemicals stored and handled in a safe manner?
      • 1. A bottle of chlorine sanitizer was in a bottle labelled peroxide disinfectant. Ensure all bottles are labelled correctly to prevent incorrect usage. 2. Lysol spray was being used on food prep surfaces in kitchen. Ensure only a food safe sanitizer such as 100ppm chlorine is used in food preparation areas.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Bottles of chlorine sanitizer in Barnyard Grill and Big Red Barn were not labelled. This was corrected during the inspection. Ensure sanitizer bottles are labeled so their contents are known.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Scoops in bulk food bins in barnyard grill and big red barn were contacting food. Please ensure scoops are either stored outside of bins or placed so handles do not contact food to prevent cross contamination.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1. In Barnyard Grill counter was in disrepair by two compartment sink making the area prone to water damage and difficult to clean. 2. Unfinished edges of counter were exposed in on centre prep table. Please repair these areas so surfaces are smooth, non-porous and easy to clean.
