      • 1. The concentration of chlorine for the glassware upstairs was at 50 ppm. 2. The concentration of chlorine for the glassware downstairs was at 0 ppm. Service the glassware washers and ensure is able to maintain 100 ppm of chlorine at final rinse. Use the main kitchen dishwasher for all glassware until they are fixed

      • A leak was observed on the floor under the main kitchen dishwasher.Identify and repair the source of the leak. Clean the affected area as indicated.

      • Cleaning cloths used in the kitchen were stored directly on food prep counters. As discussed, store all cleaning cloths in a container of sanitizer during use.

      • Several foods in the walk-in and horizontal coolers in the kitchen were not covered. As discussed, cover all foods in storage to prevent contamination.
