    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • No sanitizing solution was detected in the mechanical glasswasher. - Advised the manager to wash and sanitize glassware in the main dishwasher until the glasswasher is investigated and operates properly. -Was advised that a service technician has been contacted and is scheduled to visit the following day to investigate the glasswasher.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Observed fly activity in the preparation sink area, around the stainless-steel preparation table and adjacent shelving, and in the beverage preparation area, including the coffee station, condiment storage shelves, and nearby food-contact surfaces. Observed flies on the hanging fly strips located above food-contact surfaces and food storage areas. - Please work with your pest control operator to control and monitor fly activity. - Thoroughly clean the floors and walls around the back door and food preparation area.- Remove the rug located on the floor near the prep sink and the ice machine, as it is not washable, absorbs moisture, and may harbour pests and debris.

      • Observed two knives left in/on the kitchen hand sink.- Dedicated hand sinks must be used only for handwashing, and not for any other purpose.- Corrected during inspection.

    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Observed the glasswasher being serviced by the service provider - repair work expected to be completed some time after the PHI left the facility. The chef advised the glasswasher was out of order as of April 3 in the morning. Advised the chief to wash glassware in the dishwasher until the glasswasher is serviced.

    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • Observed a food handler with long beards not wearing beard net in the food preparation area. Up on the PHI's advice, the food handler wore a bread net at the time of inspection.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Floor tiles (3) in the kitchen were in disrepair. Operator advised the tiles would be replaced soon.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Observed dust on the ceiling tile fans in the kitchen.Please clean.
