      • X The scoop in the dry goods bin was stored with its handle in the product. This was removed during the inspection.X Open bags of thickener and other powder were stored in the cardboard boxes they came in. Powder was noted on the cardboard flaps and the cup used to scoop the thickener was stored with its handle in the product.

      • X Several scoops were stored with their handles directly in the dry bulk product they were stored in. Ensure scoops are stored in a manner that prevents contamination of the bulk supply.

      • X There was food debris and buildup under the large and medium mixer guards and hard to reach areas. These were taken apart and deep cleaned during the inspection. X The vertical cooler / freezer unit door handles had a buildup of food debris on them. These were cleaned and sanitized during the inspection.X There is buildup of syrup underneath the juice dispenser above the nozzles. X Probe thermometer, knives and peeler were stored with other items not used for food production (pens, highlighters, etc.). Ensure food equipment is stored in a manner that prevents them from being contaminated before use.

      • X There was a bucket of sanitizer stored in the hand washing sink across from the dishwasher. This was removed and another was placed inside later during the inspection. The new bucket was removed, and staff were advised to discontinue this practice.

      • X The garburator was removed, and the pipe / connection remaining was stuffed with a cloth. Please properly cap off the exposed drainage pipes.

      • X The sanitizer solution at the desert the prep station measured <50-100ppm Quats when tested. The solution came from the dispenser in the dish pit area on the wall closer to the entrance. The wall dispenser was not dispensing sanitizer at the appropriate concentration. Staff instructed to fill up their sanitizer buckets at the other dispensers available.Please test sanitizer concentrations at least daily before use.
