- X Small flies noted throughout the kitchen especially in the dish washing area. Eggs and larvae for the flies were noted in the gaps between the cover for the grease trap. Discussed cleaning this area out frequently to remove the eggs / larvae before they mature.

- X Used cleaning cloths were stored on the counter tops. These were removed during the inspection. Ensure used cleaning cloths are disposed of or stored in an appropriate sanitizer solution when not in use.

- X Some of the scoops in the dry goods bins were improperly stored with their handles in the product they were stored in. Ensure scoops are stored in a manner that prevents contamination of the bulk supply.

- X A box of frozen meat was thawing at room temperature while most staff were away on break. The internal temperature of the meat was measured at ~1C and was moved into the walk-in cooler during the visit.

- X The flooring around the equipment that removes moisture from the food waste was dirty. The garbage can for the machine was not directly under the machine causing some of the food waste to collect on the floor beneath.Staff did not clean this area up after finishing up with the after-lunch dishwashing.
