      • X Blue House - Hand washing sink being used for other activities other than hand washing – food debris observed in the hand-washing sink. Please do not use hand-washing sink as an extra dish sink to ensure it is accessible at all times.

      • X Green House – There is a leak underneath the 2-compartment sink drainpipe. A brown colored slimy sludge was building up under the p-trap for the drain above.

      • X The locked cabinet area under both the sinks in each of the 3 houses shows signs of rot and deterioration from moisture damage.- Green & Blue Houses: some of the damaged materials appeared to have been haphazardly removed prior to installation of newer grease traps. The remaining cabinet material and back wall still show signs of moisture damage and staining for removal.- Rose House: Extensive moisture damage noted. Material to be removed / remediated before new material is installed.- Repairs have been approved for all 3 houses and is in progress.

Staff instructed to stop storing products requiring refrigeration in this unit until it can maintain a temperature of 4C or less.- Maintenance was notified to assess and make necessary repairs during the inspection.

      • X The inside of several drawers storing utensils is worn, exposing unfinished wood. Some have a liner that is peeling. Refinish the inside liner for the drawers so that they are smooth, easy to clean, and non-absorbent to moisture.

      • X The high temperature dishwashing machine in the Rose house is not reaching adequate sanitizing temperatures.- Staff instructed to use the new dishwashing machines in one of the other two houses until this one is repaired or replaced.- Ensure a minimum temperature of at least 160F at the dish level is achieved or 180F at the booster.

      • X The high-temperature dishwasher in two of the three houses are out of order.X The white back pantry refrigerator (empty) measured ~10C(50F) during the inspection.

      • X The lowest recorded temperature for the Green House refrigerator was ~6C . Do not use this refrigerator unless a temperature of at least 4C or less can be maintained.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • X The final rinse temperature dial on the high temperature dishwasher in the Green House servery did not reach the minimum required 82C (180F) - 85C(185F). The high temperature dishwasher temperature recorded at the dish level did not reach the minimum required 71C at the dish level during the visit. This temperature was measured with 2 different maximum-registering thermometers including a Thermoworks DishTemp Plate Simulating Dishwasher Tester. The high temperature dishwasher could only reach a maximum of 67.8C at the dish level during the inspection after multiple cycles. Please use the dishwashers in the other serveries until this dishwasher can adequately sanitize dishes.
