- The facility had temperature records till October but were not maintaining records from the stating of the month. No temperature records were available for the month of November.-Ensure that the temperature records are maintained daily.

- The surface temperature of blue cheese in the insert placed in the small cooler was measured at 13 degrees Celsius.After checking with the probe thermometer, the internal temperature was measured at 11.6 C.The blue cheese was discarded by the operator.-Ensure that the perishable foods are kept at 4 C or less.

- **Cheese measured at 12 C in October 17, 2023 inspection**Inserts of the preparation table were not adequately buried in ice. The temperature of cheese slices was measured at 8 deg. C.

- Milk and whipped cream were stored in the front small reach-in cooler beside the ice machine. The fridge temperature measured 10 C. The operator noted that there was a technician coming in to repair the fridge. Inspector had the operator move milk and whipped cream to the other reach in cooler that was functioning correctly. Do not store perishable items above 4 degrees C.

- The back storage area, beside the soft drink syrup boxes, there were boxes stored on the floor in the corner. The area cannot be viewed or cleaned and could harbour pets. Please reorganize the corner so all items are 6" above the ground.
