    • 23. Is the facility maintained in a clean and sanitary condition?
      • Yes (corrected during inspection) - there was accumulation of some food spillage and old rodent (mouse) droppings in the lower storage area of three of the four domestic ovens in the main kitchen area. This was corrected at time of inspection.

    • 03. Is all food in this facility fit for human consumption and not unwholesome, spoiled, or adulterated?
      • An open bag of candy was observed to have mouse droppings in the bag. Dispose of the candy bag and any other contaminated foods.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Test strips were not available at the facility. Ensure appropriate test strips are available in the kitchen.
    • 15. Is the facility free of a pest infestation?
      • Large amounts of mouse droppings were observed throughout the kitchen. In cabinets and on food equipment. The mouse droppings must be cleaned up and all areas and equipment need to be cleaned and sanitized before they are used again. Any contaminated food must be disposed of. Follow up with your pest control company to ensure mice are being controlled properly.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Mouse droppings were observed on pots and pans and in the same cabinet as cutting boards. All equipment touching or near mouse droppings must be cleaned and sanitized.
