- ** - proper manual dishwashing is not occurring (seen in bathroom handsink). Use only dishwashing sinks for dishwashing, not the bathroom sink. In the first sink, wash with soap and water. 2. rinse with clean water under the tap 3. SANITIZE for 2 minutes minimum. Use the test strips to ensure the proper concentration is used. 4. Air dry.

- **- test strips onsite were for an ammonium-based sanitizing chemical. PHI could not locate any ammonia sanitizer onsite. There was a near-empty bottle of bleach noted, but no chlorine test strips. Please find the test strips that match the sanitizer you wish to use or purchase the sanitizer that matches the strips you already purchased.** - it took the owner almost 10 minutes to find the test strips - has not been trained on its use and has not employed proper testing procedures as required.

- **- the dishwashing sinks that are REQUIRED were not accessible and took 10 minutes to dig out from the pile of items on top. As this 2-comp sink is also the food handwashing sink - it cannot be blocked at any time.
