    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • At time of inspection:1. This facility appears to contain a chemical-sanitizing dishwasher (using chlorine) and a 2-compartment sink. The dishwasher was run twice and the chlorine concentration noted was approximately 50 PPM. Be advised that this dishwasher must produce a final sanitize chlorine concentration of 100 PPM.The owner / operator of this facility is requested to conduct the following, namely:1. Make any necessary repairs to this appliance to ensure a 100 PPM Chlorine residual is capable of being maintained.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • At time of inspection:1. Deep fat frying appears to be conducted under the main cooking elements. This kitchen does not contain a certified exhaust ventilation system in order to emit grease of this magnitude.The owner / operator of this facility is requested to conduct the following, namely:1. Immediately cease all deep fat frying that is currently taking place within this commercial kitchen. Adjust the menu or find a different commercial kitchen that contains a certified exhaust ventilation system.
