      • Access to hand washing sink located in front area was blocked with boxes kept in front of the sink.Requirement:Ensure that access to hand washing sink is not blocked at any time.Boxes were removed during inspection.

      • Internal temperature of corn dog stored on the hot holding grill was 55C.Requirement:Ensure that perishable foods under hot holding are stored at 60C and higher.Temperature of the unit was raised during inspection.

    • 09. Are chemicals stored and handled in a safe manner?
      • Concentration of quat was very high in sanitizer solution of spray bottle located in front food handling area. Test strip turned blue after soaking in this sanitizer solution.Requirement:Overuse of chemicals on food contact surfaces will contaminate food. Ensure that concentration of quat is maintained at 200 ppm.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Staff was not aware of procedure for washing and sanitizing the prep utensils.Requirement:Ensure that following steps are used to wash and sanitize prep utensisl:a) wash in first sink with soap b) rinse under running water in second sinkc) soak in sanitizer solution (quat at 200 ppm) for at least two minutes in third sink. Followed by air drying.

      • Soap dispenser located at hand washing sink in beverage prep area was jammed up and not dispensing soap.Requirement:Repair soap dispenser to dispense soap
