      • 1. Observed uncovered meat stored in the walk-in cooler. Please ensure all food items are covered at all times to protect from contamination. 2. Several food items were stored on floor in the dry food storage and in the walk in cooler. Please ensure food items are always stored properly off the floor.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Mechanical dishwasher is not sanitized re-usable customer dishes and utensil, its concentration was 0 ppm sodium hypochlorite. Please provide sanitizer for mechanical dishwasher. It must be 100 ppm sodium hypochlorite for every load.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Observed no test strips available to verify sanitizer concentration for tables and food contact surfaces. (Sink and Surface Cleaner Sanitizer).Please obtain test strips for Sink and Surface Cleaner Sanitizer and check it daily to verify its concentration.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Observed no paper towel at hand washing sink by food preparation area. Please provide paper towel.

      • There was no heat detected in the back area of the facility. Please provide heat to this area to ensure facility is maintained in a proper manner and to ensure compliance with Occupational Health and Safety.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Please remove white blinds from dishwashing room; these will be difficult to clean.

      • Observed two compartment dishwashing sink not working.Please repair or remove it.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • 1. The following areas need to be cleaned: -Grease build-up under and behind deep fryers (extensive grease build-up also poses an increased fire risk).-Hand washing sink by food preparation area.-Under the flat hot top.-Bottom of standing freezer by the dry storage. -Black storage rack in walk in cooler.
