- Sanitizer concentration measured 50 ppm free chlorine. At this level, sanitizing may be ineffective. Please prepare and maintain sanitizer at 100 ppm for dishes and food-contact surfaces, verify with test strips daily, and adjust as needed based on the bleach strength.

- No daily temperature logs were available for the refrigeration unit. Without monitoring, temperature abuse may not be identified and corrected. Please record refrigeration temperatures at least daily and retain logs on site for review.
