    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): 1) Peroxide disinfectant was being used as a sanitizer at the time of the inspection. As a temporary measure, a working sanitizer was obtained from an adjacent facility. 2) Existing DDBSA & lactic acid sanitizer was observed to be expired and no longer contains adequate concentration. Corrective Action: 1) Do not use peroxide disinfectant on food contact surfaces. 2) Have a food grade sanitizer readily available at an adequate concentration at all times during operation.

      • Observation(s): Ice scoop stored inside of an ice machine. Corrective Action: Please ensure that scoops are stored outside of the ice machine.

      • Observation(s): Sandwiches are stored in containers on ice on the side wall. Though storing potentially hazardous food on ice is better than without any cold-holding measures, a mechanical refrigeration unit is required for next season.
