- Please ensure daily temperature records are maintained for all refrigeration units (paying special attention to the prep cooler).

- The prep cooler, which was noted to be opened and cleaned soon before temperatures were taken, was measuring ~8C with the IR thermometer, at the time of the inspection. The operator was asked to monitor the unit and transfer all food to working cooler if the temperature is unable to hold below 4C. Food was stored in there just prior to testing.

- Temperatures are being monitored throughout the day; however, records are being maintain but not consistently. More concerted effort will be placed on recording temperatures consistently.

- A scoop was observed stored in the sugar bin. This practice is not recommended as it can cause contamination if a contaminated handle comes in contact with the food item.
