- F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
- Observation(s): This building is old and showing its age. Ongoing maintenance and repairs must be addressed. - Missing tiles in the kitchen and dishwashing area must be replaced. - The tiled beam in the dishwashing area, next to the garbage can, has chipped tiles due to plates hitting it repeatedly. This must be either retiled, or have a metal or plastic covering that is non-absorbent, easy to clean and that will not chip when plates hit it. - Caulking in the kitchen around counters and sinks must be re-caulked. They are in rough shape, moldy in some areas, and not sealing properly. - Walk-in cooler toward the storage area must have the walls and fan wiped down. - There was water dripping from the ceiling in the dishwashing area and by the walk in freezer in the back. This must be addressed. Not only does this harbor bacteria and mold, this is an enticement for rodents and other pests. - Processing line in the kitchen was down. A good washing of the grease and debris from that area must be conducted while it is pulled out. The water filters located in that area must be checked and replaced if needed.

- F1.2 Are proper temperature controls maintained to ensure safe storage and display of foods?
- Observation(s): Refrigeration unit by main entrance from the lobby holding foods between 9-12 degrees C. If the unit cannot be serviced, the unit must be removed from the premise. This was the same cooler used as "staff" fridge in the past and was not working correctly in past inspections. The same cooler is now being used for food for the public. Removal of the unit is the only option if it cannot be serviced. The temptation to use it is too great and it has not been working for a while now. The milks and whipping cream were moved to a different cooler at time of inspection. I will follow up about this cooler on June 19th, 2024. If you decide to remove it before this inspection please let me know, otherwise I will progress with enforcement action to have this removed.

- Observation(s): Holes in the ceiling tiles can allow for the entry of pests. The ceiling tiles must be replaced in the kitchen by October 31, 2024 or I may progress with enforcement action.

- Observation(s): • The ceiling vents are rusted and in severe disrepair. They must be either replaced or cleaned and repainted. This must be done by October 31, 2024. I have asked for this to be addressed in the November, 2023 inspection and to be completed by March/April. I have been more than fair in the November inspection to have it done by March/April of 2024. This infraction is still outstanding. If this is not addressed on October 31, 2024, I will progress with enforcement action. • All ceiling tiles are in severe disrepair. One ceiling tile was warped and bubbling due to past water damage. All tiles are discolored, have holes to allow for the entry of pests, or have possible water damage that can lead to the presence of mold. Furthermore, the tiles are all help up by rusty metal holders which harbor dust. These tiles and holders must be replaced by October 31, 2024. I have asked for this to be addressed in the November, 2023 inspection and to be completed by March/April. I have been more than fair in the November inspection to have it done by March/April of 2024. This infraction is still outstanding. If this is not addressed on October 31, 2024, I will progress with enforcement action. • All corner siding on the tiled walls are falling apart or missing. There is exposed wall which is not easily cleanable and can harbor bacteria. These must be replaced or refinished to ensure the surfaces can be easily cleanable. This must be done by October 31, 2024. • Both walk in freezers in the back of the kitchen have a condensation problem and ice buildup. The skirting is in disrepair and must be replaced. The tiles are missing and chipped away from staff having to chip away the ice from the floor in order to use the freezer. The ice melting on the floor is not only a major WorkSafeBC concern, but the continuous moisture along the floors can harbor mold and bacteria. This must be addressed and fixed by October 31, 2024. If this is not addressed on October 31, 2024, I will progress with enforcement action and may get WorksafeBC involved.

- Observation(s): Hot holding temperatures above 60C Temperature of a "staff" fridge located next to hot holding unit was 11C. Temperature of a "diary" fridge near entrance to the kitchen was 12C Same observations were made during Dec 17, 2021 inspection. Operator must not store potentially hazardous foods in these fridges until units are fixed.

- Observation(s): Operator must provide QUAT test strips. Operator must train staff how to properly use test strips. Operator must provide thermometers to all refrigeration units.

- Observation(s): Unable to test mechanical dishwasher as it was shut down for the day. QAUT dispenser pump station was not working. This station is used to refill sanitizing spray bottles. Operator must fix the QUAT dispenser and calibrate it to ensure that the QUAT sanitizing solution concentration is no less than 200 ppm.

- Observation(s): Mechanical dishwasher was leaking. Adjacent areas were flooded. Floor drains must be de-clogged / cleaned. 3-compartment sink was leaking. Operator must fix mechanical dishwasher and 3-compartment sink. Food containers in a walk-in cooler were stored on the floor. Operator must ensure foods are store off the floor.
