    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • There was no sanitizer prepared during food handling. Sanitizer was prepared during inspection and measured at 100ppm of chlorine.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Cheese was observed at room temperature in the back prep area. Staff moved cheese into the cooler during inspection. Ensure high risk food are stored in the cooler below 4C.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Mice droppings were observed behind the chest freezer in the front service area. Pest control reports were up to date.Ensure mice droppings are cleaned and indicated areas are sanitized with 100ppm of chlorine sanitizer.- Pest entry and exit routes should be sealed.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The shelves of the standing coolers need to be cleaned.

      • Chlorine sanitizer was at inadequate concentration. Sanitizer solution were replaced and tested between at 100ppm.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Display cooler was measured at 10C. Egg sandwiches were moved to another cooler below 4C. Ensure temperatures are maintained below 4C before food is placed in the cooler. Temperatures of coolers should be monitored and recorded at least twice daily.
