      • Observation (CORRECTED DURING INSPECTION): All sanitizing bucket storing cloths had no QUATs measured. Sanitizing buckets changed once daily as per staff.
      • Corrective Action(s): Ensure sanitizing bucket measures 200ppm QUATs so food contact surfaces can be properly cleaned and sanitized. Obtain test strips to measure concentration of QUATs. To be corrected immediately.
      • Chlorine (bleach) sanitizer should measure 100ppm. Mix 2mL (half teaspoon) of bleach with 1L of water.

      • Corrective Action(s): Sanitizer solution in green buckets for storing clean wiping cloths must be changed/refreshed every 4 hours at a minimum. Used wiping cloths are placed into red sanitizer bucket - OK.
