      • 1. The concentration of a bucket of Quat sanitizer solution at the front service area was measured to be at 0ppm. Fresh 200ppm solution was prepared by the staff during inspection.Please ensure the required 200ppm Quat sanitizer solution concentration is maintained at all times. Use the test strips at facility to measure/verify the concentration.2. Used wet cleaning cloths were not being stored in a sanitizer solution. Cleaning cloths were observed on the kitchen food preparation surfaces. The staff removed the cloths during inspection.Please ensure used cleaning cloths are stored in a sanitizer solution when not in use.

      • Used wet cleaning cloths were not being stored in a sanitizer solution. Cleaning cloth was observed on the kitchen counter. The staff stored the cloth inside a 200ppm Quat sanitizer solution during inspection.Please ensure used cleaning cloths are always stored in a sanitizer solution when not in use.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • 0ppm chlorine sanitizer solution was measured from the low temperature dishwasher after the sanitizing cycle. The sanitizer bucket was observed to be empty. The operator stated that an order has been placed and will arrive today.As discussed, before the sanitizer bucket arrives, please ensure all washed dishware, utensils or equipment are sanitized in the dishwashing sink with 200ppm Quat sanitizer solution available at the facility.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The soap dispenser at one of the handwashing sinks was empty. The staff replaced the soap during inspection.Please ensure all handwashing sinks are always supplied with soap, paper towels, hot and cold running water.
