    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • The inside of the walk in cooler needs to be cleaned i.e. around the fans.The interior of the walk-in freezer requires defrosting. A significant buildup of ice was noticed beneath the fan. I'm not certain if you can use a hose to direct the excess water into a bucket; I've seen a similar method used in freezers previously, and it seems to be effective.The kitchen space is currently underutilized; none of the prep line and equipment are in use. However, I observed grease lines down the tiles (I don't recall seeing this before and wonder what is causing this), and storage is taking place on top of the cooking equipment that is not in use. This area requires organization and cleaning, and nothing should be placed on top of the stoves, regardless of whether they are in use or not.

    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • - The mechanical dishwasher of the facility was not sanitizing the utensils adequately. - After the conversation with the operator, a new sanitizer bottle was placed, and the chlorine concentration was measured at 100 ppm. - Please ensure that the mechanical dishwasher is tested with the test strips to ensure utensils are getting sanitized adequately.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • - The facility does not have valid chlorine test strips to test the concentration of the chlorine sanitizer.- Please ensure that valid chlorine test strips are available in the facility to ensure sanitizer is maintained at adequate concentration.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • - Handwashing sinks in the food area were not equipped with proper articles for adequate handwashing. - After the conversation with the operator, the handwashing sink was equipped with soap and paper towels. - Please ensure that the handwashing sinks are equipped with soap, paper towels, and hot and cold running water at all times.
