      • Bottom shelves must be at least 6 inches off the floor to protect food contamination and/or to facilitate cleaning.
    • 19(1)(b) A food establishment must be located, designed, constructed and maintained to ensure all of the following:  (b) that operations are carried out in an area of the food establishment that is sanitized and appropriate to the operation;
      • No food processing/preparation or handling of raw meat is permitted at the sample booths as their is no plumbed hand washing available. Processing means to substantially change or alter the appearance or nature of a food, to combine with an ingredient or additive or to make foods ready-to-eat. All food processing/preparation must be completed in the CDS preparation/storage area or in one of the other Costco departments (Deli/Food Court). Equip sample booths with hand wash stations.
    • 27(d) A food establishment must develop and demonstrate policies and procedures for personnel that ensure that a person entering a food handling area or engaging in an operation in a food establishment who comes into contact with food meets all of the following: (d) the person washes their hands as often as is necessary to prevent contamination of food;
      • Food handlers must remove contaminated gloves and wash their hands prior to putting on new gloves.

      • Club Demonstration Services (CDS) observed processing raw meat and chopping fruit at the demonstration booths; no plumbed hand washing is available at the demonstration booths. No food processing/preparation or handling of raw meat is permitted at the demonstration booths. Processing means to substantially change or alter the appearance or nature of a food, to combine with an ingredient or additive or to make foods ready-to-eat. All food processing/preparation must be completed in the CDS "office" or one of the other Costco departments (Deli/Food Court).
