- Observation (CORRECTED DURING INSPECTION): Scoop observed in the walk-in cooler covered in diced onions and chopped cilantro being stored directly on top of the covered food bins.
- Corrective Action(s): If being used throughout the day, the scoop should be put inside a clean container inside the walk-in cooler. Wash and sanitize the scoop at the end of each day. Another way is to wash and sanitize the scoop after every use. Staff put the scoop inside the sink to wash at the time of inspection.
