- Corrective Action(s): Staff was instructed to wash hands and wipe with paper towels at the handwashing station. Keep the towel for cleaning food contact surfaces in a sanitizer bucket. A separate towel should be used solely for grabbing hot pans.

- Observation (CORRECTED DURING INSPECTION): Foods (cut vegetables, mayo, pickles) in inserts in the top compartment of the cook line prep coolers are measured at 9-15C. Staff stated that food were stored in the inserts since 10am (it has been around 4 hours).
- Corrective Action(s): Cut vegetables including tomatoes, red onions, lettuce, and pickles were discarded. Mayo was discarded. Ensure the lids of the prep coolers are closed when not in use as the heat from the stoves and grill can warm up foods in inserts. Alternatively, use a time-tracking system for the inserts where unused items are discarded after 2 hours of room-temperature storage. Only keep small amounts of potentially hazardous foods in the inserts.
