    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The facility uses clean-in-place buckets appropriately, storing used cloths in quats sanitizer solutions.Two clean-in-place buckets at the till area were measured at concentrations below 100 ppm. The operator remade the solutions, which were remeasured and confirmed to be at 400 ppm.Two other clean-in-place buckets in the back kitchen were measured at 200 ppm.Please ensure clean-in-place buckets are routinely monitored and tested using test strips to confirm that quats sanitizer concentrations are maintained within the required range of 200–400 ppm.

      • 1) Please cover food in storage. Boxes with food observed stored uncovered in the walk-in freezer. 2) Please ensure that food and food packaging is stored off the floor.3) Please use scoops with handles to scoop food from bulk supply and not cups/bowls without handles.4) Please repair condenser unit in walk-in freezer/in the meantime, please do not store food below condenser.

      • The back handwashing sink had soap and a roll of paper towels stored on the counter without an adequate dispenser or holder.Please repair or replace the paper towel dispenser in the cake decorating room, or provide an adequate paper towel holder suitable for counter use.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The floor in the cake room was observed to be dirty in the corner of the room beside and behind the garbage can.Staff cleared the area and swept up the accumulated garbage and debris.The floor of the walk-in freezer was observed to have noticeable amounts of cake toppings present. Staff swept the area, restoring it to a clean condition.Please ensure regular cleaning is conducted so that all food handling areas are maintained in a clean and tidy condition, minimizing the potential to attract pests.

    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • X - It was observed that the food boxes were placed on the floor, excessive food debris on the floor, and some food products were not covered or protected from contaminants in the walk-in cooler. Boxes stored on the freezer floor can impede proper cleaning and pose a risk of contamination. Food debris can in unsanitary, and uncovered food is crucial to maintain their quality and prevent contamination.**********************************-Please organize the freezer to maximize storage efficiency while ensuring that most food items are stored at least 6 inches off the floor. Remove all food debris and schedule routine cleaning and maintenance sessions for the walk-in cooler to uphold cleanliness and compliance with food safety standards.

      • No pest infestation noted in the facility. No pest control records available. - Please provide copy to the inspector and this needs to be conducted monthly and keep records on file in the facility.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • X1 - It was observed that areas that are considered hard to reach areas, particularly in the front counter where sauces and creams are stored as well in the back kitchen areas exhibited an accumulation of food debris and require thorough cleaning and sanitation. This can lead to attraction of pest in the facility and potential for cross contamination. Food debris provides breeding ground for bacteria, mold and pests. X2 - It was observed that the food prep area in the back kitchen were left unattended (utensils were left as well - egg beater, knife, cutting board, towels) and the surrounding area was not properly sanitized. This poses a risk of contamination and is not in line with safe food handling practices. **************************************- Please conduct a deep cleaning of all hard-to-reach areas paying special attention to corners, spaces behind equipment and areas with potential spillage or debris build up. Ensure that they are consistently maintain in a clean and sanitary condition. -Please ensure that food preparation areas are consistently maintained in a cleaned and sanitary condition after each use to prevent an environment where harmful bacteria could potentially thrive.
