- Observation: Potentially hazardous cold foods are stored at above 4°C. Observed cheese curds at 13.6°C and sliced vegetables at 11.4°C. All potentially hazardous foods must be stored at below 4°C or above 60°C - out of the danger zone to prevent bacterial growth and possibly food borne illness
- Corrective Action: Operator moved cheese curds to working refrigeration unit and began preparing ice bath. Operator to ensure that refrigeration units maintain a temperature of 4°C or less, monitor and adjust the temperatures or have serviced, as required. Ice baths can be used temporarily to keep foods at 4°C or below until refrigeration unit is repaired or replaced. Potentially hazardous food cannot be stored between 4°C and 60°C for more than 2 hours.

- Observation: Observed build up of dirt on vents and ceiling. Dirt can dislodge and contaminate food and/or food contact surfaces.
