      • Corrective Action: Operator to ensure that sanitizer solution is at 100-200 ppm.

      • Observation: (CORRECTED DURING INSPECTION) Food premises is preparing foods that are in violation of their permit. Facility must be adequately equipped to accommodate and facilitate safe food preparation.
      • Corrective Action: Discontinue sale of products that are in violation with the permit conditions. Ensure all products for sale to the public are obtained from an approved facility.

      • Observation: (CORRECTED DURING INSPECTION) Operator is not following the three compartment dish washing method. First compartment is to be used for washing, second for rinsing and third for sanitizing. No sanitizing is being performed. Hand washing dishes requires 100-200 ppm unscented bleach solution to adequately sanitize dishes. Sanitizing is an important step in dishwashing that decreases the microbial load on utensils, dishes and equipment.
      • Corrective Action: Operator to soak dishes for 45 seconds in minimum 100 ppm bleach solution at a temperature of 24°C. Bleach solution not to exceed 200 ppm.
